Pumpkin Spice Dump Cake with Simple Cinnamon Ice Cream:
- 15 oz can pumpkin puree
- 10 oz can evaporated milk
- 1 cup light brown sugar
- 3 eggs
- 1 tablespoon pumpkin pie spice
- 1 box yellow cake mix
- ¾ cup melted butter
- ½ cup crushed Graham crackers
- ½ cup chopped pecans
- Ice Cream:
- Half gallon vanilla ice cream
- 1 tablespoon ground cinnamon
- Preheat oven to 350°.
- In a large bowl, whisk together pumpkin, evaporated milk, brown sugar, eggs, and pumpkin pie spice. Pour into a 9×13-inch baking dish coated with cooking spray.
- Sprinkle cake mix evenly over the top of the pumpkin mixture, followed by the crushed graham crackers and pecans. Drizzle melted butter evenly over the top.
- Bake for 45 to 50 minutes, or until center is set and topping is golden brown.
- Scoop ice cream into a large bowl. Soften at room temperature 5 to 10 minutes.
- Sprinkle with cinnamon, and mix, using a wooden spoon, until evenly combined. Serve over warm cake.
If desired, scoop leftover ice cream into an airtight container, and freeze until ready to use.

What you see above are the slow cooker pork sliders which are phenomenal! I wouldn’t give you all the recipe and say “GO FOR IT!” if I hadn’t got the big green light from my friends and family who got to try these yummy tailgating recipes with me! And nowwww I am going to share the recipe with you all!!
Slow Cooker Pulled Pork Sliders (Example Recipe from our Tailgating Menu):
6 lb bone-in pork should roast, trimmed
2 teaspoons salt, 2 teaspoons pepper
18 oz bottle barbecue sauce
1/2 cup chicken broth
2 tablespoons apple cider vinegar
2 (12-count) packages slider buns
16 oz jar bread and butter pickles
Sprinkle roast with salt and pepper.
Combine roast, barbecue sauce, broth and vinegar in a 5- to 7-quart slow cooker.
Cover and cook on Low 8 hours or until roast is very tender.
Remove pork to a cutting board; shred with 2 forks.
Return pork to slow cooker, and discard bones.
Toss pork to coat with sauce; serve on slider buns with pickles.

I totally failed a lot of my monthly challenges. I have binged on junk food on bad days, spent way too much time on Facebook, forgot to document my yoga and gratitude and totally neglected, my blog, baby.
So today I pulled the trigger and deactivated Facebook. I know that I should probably have a page for my Tastefully Simple and for this blog, but I needed to so that I could make sure to give myself the break I need especially since school is starting this week! I would never want to lose all my pictures so I won’t totally delete forever. Although I already do feel like I am concentrating more on blog topics and spending more time with the babes.
Tonight we went to the fair and it was a blast! I even posted a picture on my Instagram of Penny riding the motorcycles. (Find me: Mommyhoodmania) We even let the kids eat the free twinkies they were giving out and I had a gigantic corn dog which I guarantee I will pay for later..but thats another blog post! HAHA Beckham won a rainbow light saber and Penelope won a purple glitter dolphin as well as claiming ownership of the inflatable hammer her dad won. I found the cutest lunch boxes at the John Deer stand that I just had to buy the kids for lunch bunch. They will be perfect for their bento boxes and cups
All in all deleting facebook has been a great decision already!
I can’t wait for you all to read some of the blogs I have coming up including one about Emeals, Kairos Life, and another about a young adult book!

Once again this mama is up early and no not because of the kids… It’s because of a food hangover!!! Ughhh I call what I am feeling a food hangover because every time I eat something that’s unhealthy I wake up the next morning really early with a horrible stomach ache and feel in a haze! I always think you should of just gone out said eff that nartsy food and had a bunch of drinks! Plus I’d burn off those calories dancing my ass off!
But no… I went to Friendly’s and ate something they call a Chicken Chipotle Ranch sandwich and then a “2 scoop” that was really one black raspberry with chocolate chip ice cream…. At least I drank water total sarcasm hahahah
So this morning I will reaffirm my desire to eat healthy and live a long life, ill do some yoga, and I’ll just unplug! So on that note I’m off to eat some blueberries and watch project runway until everyone wakes up or until I leave for work
This past weekend , Jar, surprised me with a trip to a restaurant I have been dying to go to, Clementine. We absolutely LOVED it! I say this with such exclamation, because my husband is an extremely picky eater & he was blown away. Jar, the super serious man, was smiling and giggling over macaroni and cheese that he claimed was “the best he’s ever had”. When we arrived we parked across the street behind the local drugstore and walked over. We had reservations, but arrived a couple minutes early. I expected to wait but we were seated right away at a small little wood two top table. It was so cute and I really enjoyed the decor.
The picture on the right is the meat fridge that was located directly behind our table! It was really cool to se all the meats especially because they are a farm to table type of restaurant with a note in the menu to be patient with them because everything is cooked to order fresh. Everything we drank was fantastic. Jar drank a small batch bourbon that was amazing while I stuck with a glass of cava and water. They even give you some fresh bread and butter to start you off while you wait to order which is fantastic in my opinion! The bourbon was so smooth that while it’s not my typical choice of drink I was almost tempted to order one for myself. If you really took the time and tasted it you could actually taste the maple and the other individual elements… delicious! Our waitress was absolutely fantastic and I am really sad because she shared that she was actually moving to Oregon for an amazing opportunity, but she really did give exceptional service the whole time! For appetizers we tried the mac n cheese and the duck nachos. I thought both were phenomenal. I do wish the nachos had a little bit more meat and a little less sauce, but not enough that it would stop me from ordering them again. After those we moved onto dinner which Jar chose the bacon wrapped meatloaf and I chose the steak with the mash and arugula which were both excellent! We would absolutely go back and plan on it. I can’t wait to go back and try something new considering they change their menu every day! Tell me that isn’t cool… forget specials every day is a special. The other plus…totally family friendly! They have a different side which they use for families I noticed that kind of gave a nice vibe for people who didn’t have children and a comfortable environment for people who did! I left with a non food coma satisfied stomach and a nice to go box that I enjoyed the next day. We saved some of the mac n cheese for the kids and penny wasn’t a huge fan, but lucky for Bex, because he devoured it! Overall…..
I JUST CAN”T WAIT TO GO BACK!
Tomorrow is the fire day I will be starting P90x… wish me luck! I say that because this is the first physically strenuous thing I have had to do that deals with anything exercise related. In a way I am doing it to tone my body and another reason is that I have the Color Run in May. My goal for the color run is to not walk any of it! This is 3 miles…. Everyone around me thinks I am crazy and I am here feeling like I should be on that MTV show MADE. I have a feeling I will look like one of those people puking up liters of water after a workout that makes me feel somewhat like death. So to prepare for today I am drinking tons of water. I opened at my job today so thats in at 9 after making breakfast for the kiddos and getting ready in my nice fancy uniform that makes me looks like a mix between a dude and someone on broadway. Which I am completely fine with as long as someone hands me a cane and I can side step my way across the room with a cheesy smile on my face! I just got home figured I’d show my blog a little TLC and then get ready for dinner with the family. I have a feeling I’ll be cooking my usual 2 meal routine (see this post) Although tonight is a PBJ kind of dinner night with a wonderful side of grapes and some other fruit or veggie that I’ll decide upon when I look into my fridge
Here we are almost in the middle of January and I haven’t even started to write a post about my resolutions. Like the 5,098,409 other people around the nation I am promising myself a 2013 with a fit, healthy, lifestyle. I am not obsese or bone thin. I am average, I’d like to think.
So every time I tell someone I am trying to eat healthy and work out I hear “You are so skinny. You don’t need to lose weight!” When in reality this journey has nothing to do with weight, being skinny, being, fat. It’s all about being healthy, about a balanced diet, and healthy activity. I have been logging my food in a diary on My Fitness Pal app on the iphone. They also have a website and I must say its awesome http://www.myfitnesspal.com/. I log my food, my exercise and it really helps me stay on track. I have also been doing Zumba on the xbox kinect and it is insanely fun. I feel so relaxed afterward and great about myself in general. It keeps track of the calories I burn, the activities I do on it, and my progress in general. The best part is the kids see me doing exercise and will stand behind me trying to do the Zumba moves as well Between those things and my friends fitness page on facebook, [www.facebook.com/pages/amandaschisslerfitness] I am completely motivated to get myself in a healthy and energized way of life that doesn’t consist of sitting in front of the TV with my white cheddar snow balls all night long!
